Quick Mexican Cuisine

Looking for a way to spice up your weekly dinner menu? Then leave bland behind and tempt your taste buds with hot and spicy recipes that are perfect for any time of year.

• For Mexican-style eggs, add canned diced tomatoes, canned chilies and chopped onions to your eggs and óle! - you're ready for the day.

• For quick and easy Mexican dishes, use canned refried beans for your tacos, burritos and enchiladas.

• For a cold bean dip, add reduced-fat sour cream to a can of refried beans and serve chilled with tortilla chips.

• Mix canned diced tomatoes, chopped scallions, canned green chilies and black olives with a little bit of olive oil and wine vinegar to create a scrumptious salsa.

• To add spice and flavor, use plenty of canned chili peppers in your fiesta dishes. Varieties range from very mild to red-hot, so go ahead and pick your "poison!”

• When buying prepared tortillas, make sure they are very soft and fresh. Reheat your tortillas by individually warming them on both sides in a griddle or iron skillet.  Stack them and wrap in a clean, cotton towel to keep warm.

• Great as a stand-alone dish or as part of a recipe, enjoy canned-prepared chili, which is a hearty staple in Mexican cuisine.

• Add canned, prepared chili to your nachos for an appetizer that really satisfies the munchies.
