Ingredients

  • 3 tablespoons finely minced parsley
  • 3 cloves garlic, minced
  • 3 tablespoons finely minced dill pickles
  • 3 tablespoons olive oil
  • 1 can (about 4 ounces) whole button mushrooms, drained
  • 1 can (2 ounces) rolled anchovy fillets
  • 1 can (about 14 ounces) whole new potatoes, drained, quartered or halved, depending on size

Preparation

  1. Mix parsley, garlic, pickles and oil in a small bowl.
  2. Skewer mushroom, anchovy and piece of potato on 6-inch bamboo skewer.
  3. Brush each with parsley mixture.
