- dairy free, nut free, sugar free
- 3 tablespoons finely minced parsley
- 3 cloves garlic, minced
- 3 tablespoons finely minced dill pickles
- 3 tablespoons olive oil
- 1 can (about 4 ounces) whole button mushrooms, drained
- 1 can (2 ounces) rolled anchovy fillets
- 1 can (about 14 ounces) whole new potatoes, drained, quartered or halved, depending on size
- Mix parsley, garlic, pickles and oil in a small bowl.
- Skewer mushroom, anchovy and piece of potato on 6-inch bamboo skewer.
- Brush each with parsley mixture.
