Skillet Shepherd's Pie

  • 3 cups (750mL) chopped cooked turkey breast [or lean ground beef or rotisserie chicken]
  • 1 28oz. (850mL) can diced tomatoes
  • 1 15oz. (425mL) can whole kernel corn, drained
  • 1 15oz. (425mL) can cut green beens, drained
  • 1 8oz. (240mL) can kernel corn, drained
  • 1 8oz. (240mL) can sweet peas, drained
  • 2 Tbsp. (30mL) butter in small pieces
  • 1 ½ tsps. (7mL) Worcestershire sauce
  • 1 tsp. (5mL) dried thyme
  • ½ tsp. (2 mL) garlic powder
  • 4 cups (1L) instant mashed potatoes, prepared or leftover mashed potatoes
  • ¾ cup (175mL) shredded sharp Cheddar cheese


  1. Preheat oven to 350F (180C). Combine first 10 ingredients in a deep 12-inch (30cm) oven-safe skillet.
  2. Heat over medium-high heat, stirring occasionally, until liquid in skillet begins to simmer.
  3. Reduce heat to medium; cover and cook 10 minutes or until thickened slightly.
  4. Remove from heat.
  5. Spoon mashed potatoes evenly over turkey mixture; sprinkle with cheese and bake, uncovered, 20 to 25 minutes or until heated through.
