Terrific Tuna Roll-Ups Recimeal

ReciMeals are designed to be complete meals that need only be accompanied by a beverage, and sometimes a side salad or slice of bread. A ReciMeal provides significant amounts of at least three of the five MyPyramid food groups: about 1/2 cup of fruits, 1/2 cup of vegetables, 1 ounce equivalent of grain foods, 2 ounces or the equivalent of lean meat or beans or 1 cup or the equivalent of milk per recipe serving. Think of these fanciful wrap sandwiches as tuna salad sandwiches with an Asian-flavor profile and a contemporary Southwest feel. Vary the look of the roll-ups by using colorful tortillas flavored with chilies, herbs, spinach, blue corn or whole wheat. Ingredients

  • 1/4 cup reduced-fat mayonnaise
  • 4 teaspoons Dijon-style mustard
  • 2 cans (about 6 1/4 ounces each) chunk tuna packed in water, drained
  • 1/2 cup coarsely chopped canned water chestnuts, drained
  • 1/2 cup thinly sliced green onions
  • 1/3 cup canned, chopped roasted red pepper
  • 4 (8-inch) flour tortillas
  • 2 to 3 cups shredded romaine lettuce

Preparation

  1. Blend mayonnaise and mustard in a mixing bowl.
  2. Stir in tuna, water chestnuts, green onions and roasted red peppers.
  3. Divide tuna mixture among tortillas, spreading to within 1 inch of the edges.
  4. Cover each tortilla with about 1/2 cup lettuce.
  5. Roll each up tightly like a jellyroll.
  6. Cut in half diagonally and serve immediately.
