September 16, 2008 | De-stress Dinner with Nutrition and Convenience
When it comes to planning and preparing food, not all moms are the same. In fact, Rutgers University researchers recently asked moms how they make food choices, and four distinctly different profiles emerged. Each group differs in making food decisions that affect the entire family’s nutrition. The study also found that many moms feel that healthful meals and convenience can’t co-exist. So Mealtime.org created the following stress-free meals that incorporate nutritious canned ingredients and require short prep time, so you can have dinner on the table in 30 minutes or less!
What type of Mealtime Mom are you? Take the quiz and find out! |
 | | | Beefy Potato Volcano What could be heartier than a baked potato topped with homemade beef stew? This dish is as filling as they come, and no one will guess that it went from pantry to table in about 30 minutes. The trick to creating the quick stew is using canned vegetables, which are cooked when they’re canned, so all you have to do is heat them up. Great news for moms: canned veggies have about the same great nutrition as cooked fresh vegetables!
 | | | Caribbean Stir-Fried Shrimp Stir-fries are speedy, but this one-skillet meal is even faster because the vegetables come right out of your pantry. There’s no chopping, no peeling and very little cooking – and no sacrificing flavor. The combination of shrimp, canned tomatoes, chilies, peppers and pineapple is sweet, tart and dynamic – the perfect end to any long day. And served over rice, it’s a colorful, four-food- group dish!
 | | Spaghetti Tutto Italiano This recipe is easy because practically everything in the rich, creamy pasta sauce is pre-cooked and can already be found in your pantry. The base for the sauce is a can of creamy mushroom soup that is enriched in seconds with a can of fiber-rich white beans, a little tomato sauce and a can of heart-healthy tuna. A restaurant-quality Italian dinner in the time it takes to cook the pasta – bellissimo!
