Packed with fruits, vegetables, grains and proteins, this well-balanced rice pilaf is a nutritious addition to any meal. The colorful side dish combines chopped walnuts and canned cherries with fragrant garlic for an unexpected flavor sensation.Ingredients:1 package (4 ounces) brown and wild rice mix
1 can (15 1/2 ounces) pitted dark sweet cherries in light syrup, drained
1/2 cup cucumber, peel on, seeded and diced
1/2 cup diced red bell peppers
1/2 cup chopped canned water chestnuts
1/2 cup chopped walnuts
1/4 cup chopped celery
1/4 cup chopped parsley
1/2 teaspoon grated orange peel
1 tablespoon chopped onion
1 clove garlic, minced
Preparation Time: Approximately 10 minutes
Cook Time: Approximately 40 minutes
Preparation:Prepare the rice mix according to package directions, but without butter, margarine, or salt. Meanwhile combine the remaining ingredients in a large bowl and toss to blend. Add the rice, and toss gently. Serve warm or at room temperature.Servings: 6
