Persons 6 Prep Time 20 minutes Total Time 20 minutes Ingredients 2 tablespoons vegetable oil 1/4 cup fresh lime juice 3/4 teaspoon ground cumin 1 tablespoon minced fresh jalapeño pepper, optional 1/2 teaspoon salt, optional 1 can (11 ounces) whole-kernel corn, drained 1 can (15 ounces) black beans, drained and rinsed 1/2 cup, 1/4-inch diced red bell peppers 1/2 cup, 1/4-inch diced green bell peppers 1/2 cup 1/4-inch diced sweet onion 1/4 cup chopped parsley Instructions Whisk the oil, lime juice, cumin, jalapeño and salt in a small bowl. Combine the corn, beans, bell peppers, onion and parsley in a large mixing bowl. Pour the dressing over the vegetables and stir until thoroughly coated. Let stand 15 minutes to blend the flavors, or refrigerate up to 2 hours before serving. To serve, spoon the salad onto a bed of lettuce or greens.
