Corn Salad With Lime Dressing

Ingredients
- 2 tablespoons vegetable oil
- 1/4 cup fresh lime juice
- 3/4 teaspoon ground cumin
- 1 tablespoon minced fresh jalapeño pepper, optional
- 1/2 teaspoon salt, optional
- 1 can (11 ounces) whole-kernel corn, drained
- 1 can (15 ounces) black beans, drained and rinsed
- 1/2 cup, 1/4-inch diced red bell peppers
- 1/2 cup, 1/4-inch diced green bell peppers
- 1/2 cup 1/4-inch diced sweet onion
- 1/4 cup chopped parsley
Instructions
- Whisk the oil, lime juice, cumin, jalapeño and salt in a small bowl.
- Combine the corn, beans, bell peppers, onion and parsley in a large mixing bowl.
- Pour the dressing over the vegetables and stir until thoroughly coated.
- Let stand 15 minutes to blend the flavors, or refrigerate up to 2 hours before serving.
- To serve, spoon the salad onto a bed of lettuce or greens.
