Ingredients
- 1/2 cup vanilla Greek yogurt (ideally with 0g added sugar)
- 1 large egg
- 12 jarred pitted Bordeaux cherries, stems removed, drained, plus 1 1/2 teaspoons of the Bordeaux cherry juice
- 4 thick slices multigrain sandwich bread
- Optional: small fresh mint leaves and/or lemon zest for garnish
Instructions
- 1. Preheat the oven to 400°F.
- 2. In a small bowl, whisk together the yogurt, egg, and the 1 1/2 teaspoons of the jarred cherry juice until creamy.
- 3. Press the back of a spoon into the bread slices to form shallow empty “pools” for the custard. Spoon the custard mixture onto the “pools” and top with the (whole or halved) cherries.
- 4. Bake until the bread is richly toasted and crisp on the bottom, about 13 to 14 minutes. Garnish with mint and/or lemon zest, if desired, and serve.
