- 1 can (16 ounces) beets, drained
- 3 canned anchovy fillets
- 2 tablespoons plain, fat-free yogurt
- 1 tablespoon lemon juice
- 1 garlic clove
- 1/4 teaspoon freshly ground pepper
- 2 ounces feta cheese, crumbled
- 1/4 cup chopped green onion
- Purée beets, anchovy fillets, yogurt, lemon juice, garlic and pepper in a food processor.
- Stir in feta cheese and green onion.
- Refrigerate until chilled.
