Scrambled Egg Whites With Spinach And Orange

Egg whites are a great source of protein without the fat and calories. Add spinach and orange zest for extra flavor and nutrients.

  • 6 large egg whites
  • 2 tablespoons canned tomato sauce
  • Dash of cayenne pepper Salt, to taste
  • Vegetable oil cooking spray
  • 1 cup canned spinach, well drained
  • Grated zest of one orange


  1. Beat egg whites until frothy.
  2. Stir in tomato sauce, cayenne and salt.
  3. Coat a non-stick skillet with cooking spray and add spinach.
  4. Sauté until dry.
  5. Pour in egg white mixture and cook slowly, stirring occasionally until thickened.
  6. Sprinkle with grated orange zest and serve immediately.
